Peanut Butter Cupcakes

I promised you a recipe for peanut butter cupcakes and here it is..but firstly I need a little help from you.
I promise it doesn’t involve washing dishes or babysitting.

I need to ask you a few questions. 
If you were to do a 3-hour cupcake workshop with me,

Peanut Butter Cupcakes

Recipe type: Cupcakes
Serves: 12
  • 75g butter, room temperature
  • 125g crunchy peanut butter
  • 185g brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 125g plain flour, sifted
  • 1 teaspoon baking powder
  • 60ml milk, room temperature
  1. preheat oven to 160C, line a 12 hole cupcake pan with papers
  2. beat the sugar, butter and peanut butter for a few minutes until well combined. Add eggs one at a time beating well after each addition then add vanilla and mix until incorporated
  3. sift flour and baking powder together in a separate bowl,add to butter mixture one third at a time alternating with milk until all added
  4. spoon mixture into cupcake papers, bake for about 20-25 minutes or until cooked, test with a skewer
  5. remove from oven and allow to cool in pan for about 10 minutes, then place on wire rack to completely cool and ice with chocolate icing


60ml cream
25g butter
200g milk chocolate buttons
100g dark chocolate buttons


place cream and butter into a small saucepan over a low heat and stir continuously until butter has melted
remove from heat and add chocolate and stir until all melted. if it hasn't all melted just return to low heat and stir continuously until it has melted, do not leave it burn
allow to cool and then spread over cupcakes

  • I'd like to learn a 'healthy' cupcake, a black forest cupcake and a turkish delight cupcake.
    I'd like to know how to pipe that tall cupcake icing.
    I'd like to know how to do a few sugar flowers or similar toppers so I could have a few batches on hand that made my cupcakes obviously mine – a flower (or something) that I could turn into my 'signature' but wasn't too expensive to make.
    And ganache – a glossy, tasty, chocolate ganache – I've never managed that!

  • Ohhh Cathie, these look fabulous! I would really like to learn how to make all the topper thingys. Like the fondant flowers there, and to make those little hearts and stuff. Also red velvet cupcakes. And how to put stuff inside them so they come out gooey. If you know what I mean? I've never been able to manage that. I really think I'll give these ones a go on the weekend, they look divine. And I loooove peanut butter!

  • Going to follow Anna's lead there with the healthy (er … healthier!) cupcake recipe and Turkish Delight, yum! I like the idea of any cupcake flavour that's not the conventional chocolate or vanilla.

    Types of icing – something simple but still delicious, and easy to make. Same again for decorating – I tend to get turned off anything too fussy in terms of prep/application. But I still like things to look pretty!

    I will go with the above suggestion of a healthy/ier cupcake as well as the best gluten free cupcake recipe (I am a coeliac but I realise this may not be a popular choice!)

    I think shortcuts for gorgeous decorating. Lets face it, we all want to know the quick, time effecient way to make things look beautiful. I have no time or patience for 'professional cake decorating' unfortunately!

  • Oh gorgeous, who wouldn't want to spend 3 hours with you, does that include Q&A, chatting & photos afterwards?? Non??
    I would like to see some fun cupcake birthday cake ideas (you know, simple children's serving cake options).
    I would die to hear about some handmade wrapper ideas, like bake them in boring white wrappers & adorn them in something uber pretty & special.
    I would love to learn how to make mini marble cakes, a classic colourful fun treat with every bite.
    My waist line would love to hear about a healthy icing (if one exists, even writing that sounds ironic).
    I know i'd need a good basic fluffy vanilla cake recipe (my mum's 2/4/6/8 recipe is a bit heavy) & a chocolate cup cake recipe with options like cherry or raspberry flavour. Oh, something moist, yes, you know like those beetroot infused juicey cakes.
    This has opened quite the can of cup cakes hasn't it?? Love Posie

  • yes,,agreeing on the healthy cupcake. so how come your icing just looks so perfectly unedible? no running, no color fading. and what about that flower?? they are just so beautiful. i dont want to eat them, i want to take them to the movies.x

    Oh my god I would want to learn everything you know!!! I need a good caramel cupcake recipe. Being allergic to chocolate makes me a total caramel addict. I would also love how to make pink lemonade cupcakes. The only recipes I can find online are american ones and I can't get the ingredients here.

    I would love to know how you pipe icing to make it look like a rose. I think that looks so cool! I would also love to know how to cover cupcakes in fondant icing. I have seen some super cute headgehog ones once but no idea how to make them.

    I agree with Selina about learning how to make cupcakes with filling inside that oozes out when you break them open. They look so impressive!

    There are so many things it would be hard to fit them all into a few hours. I want to know everything!!!

  • Ok, I am coming to your cupcake workshop on Saturday and I am really looking forward to it.

    I really want to learn how to make pretty/beautiful cupcakes. I can make ones that taste yummy but I have no idea how to decorate.

    I am not sure about what flavours of cupcakes I would like to learn – maybe some different types like lemon or chai, etc. I am definitely not interested in healthy cupcakes; cupcakes are a treat for me.

    As for your questions:

    I'd like to know how to make sure they're moist and how best to store them ie. plain and un-iced, or when they're ready to roll, do you put them in a tupperware container, in the fridge & if you have tips on how to transport them?

    Flavours: definitely vanilla – and do you use essence or bean? and something a little less "usual".

    Decorating: Definitely piping technique (which I suck at!) & making them pretty.

    I'd love to come to one of your workshops – alas the distance!

  • I would like to know how to make them visually appealing. Ive got the buttercake recipe to taste pretty good but I never seem to know how to decorate them. I love your choice of icing and flowers, thats how I would like to do them, even for the kids parties, not all colourful and tacky like mine seem to turn out.

  • Yum! I like experimenting with different flours, especially to make them more whole foody, like wholemeal flour, almond and hazelnut meal – maybe you have some good ideas? I also like citrus flavours, can you tell I'm not very sweet? Yours always look so good, I'd take any advice on decorating you could offer!

  • I'd like to learn how to make great frosting / ganache, and how to make decorative icing thingies for the tops.
    As for flavours – it would be great to be able to begin with a really simple basic recipe, which you could easily transform just by adding chocolate, or raspberries etc.
    Oh, and I can vouch for the deliciousness of the peanut butter cupcakes for sure!

    I'm not quite a baker (I love eating though), so I don't think I'm much of a help to you. Sorry 🙁 But may I suggest green tea flavour? I always have green tea cake, but I've never seen green tea cupcakes before!

    I would also want options for customising vegan & gluten free!

  • mmm, I feel that maybe a series of workshops is needed for all the great ideas!! I think: one basic recipe that is adaptable (with some flavour variations) a healthy one (maybe gluten free??) and one all out indulgent one…. and simple and stylish decorating ideas.

  • I will just have to settle for making, the recipes that you put up here and copying your elegant presentation.
    I don't quite know how to explain a trip to Melbourne for a cupcake workshop!

  • They look sensational! I'd love to learn a red velvet cupcake and a ginger cupcake. And the complimentary toppings of course. I did a class with Jennifer Graham owner of the Crabapple Bakery, just before she shut up shop. It was so much fun! she had ready made cupcakes to ice and we focused on that after a few pointers. Lots of fun. I hope your class goes well. x

    It would be fantastic to attend a cupcake baking workshop of yours… but wouldn't it be easier (for me) if you just did the baking and then I could just sit and watch you and then eat them???!!! 🙂

  • Thanks for this recipe, I made it for my son's birtday party today, and it tasted delicious! Just one question: It says add vanilla after the eggs, but there is no vanilla in the recipe, is there?

  • Wow, I would so love to do a cupcake making course with you. I love cupcakes and to be able to make some with proper ganache toppings and beautiful frostings would be amazing. Would love to be able to make something that looked even semi-professional!! As for flavours, red velvet and mmmmm, ginger or orange poppyseed. xx
