Some days are harder than others. From the moment you open your eyes in the morning, you feel the stress, the chaos, the pressure.
Being a mum comes with a variety of emotions, it brings pleasure, happiness, immense love, laughter, anxiety, fear, moments that make you smile so much and moments that make you feel like crying.
Some days I deal well with the overload of emotions but other days I feel tired, consumed with it all. Unable to emotionally step away from the fighting, the nagging and the two-year-old tantrums.
Whenever I smell cinnamon it reminds me of the rice pudding mum used to make for us when we were little.
It was one of those things that took no time to make and yet filled our tummies with so much sweetness and comfort.
As winter approaches and the mornings and nights get chillier I am transported back to the sweet smelling rice pudding bubbling away on the stovetop. Sweet, warm and creamy with a sprinkling of extra cinnamon on top.
Today I am loving the cold weather, it’s perfect for snuggles on the couch, drinking endless cups of chai, making soup and having the oven on to bake delicious lemon tarts.
Our fridge is still full of lemons from mum’s tree, I have given away so many and yet we seem to have a neverending supply in there. We don’t mind because it means I can make lemon tarts to share around.
This lemon tart has been a favourite for many years. I like to surprise friends on their birthday’s or when I know they need some cheering up. It definitely brings a smile to their faces with its beautifully shortcrust pastry and tangy lemon filling.
