Easy one bowl Orange Cake

Serves: 20cm cake serves 10
  • 150g butter, softened
  • 150g sugar
  • zest of an orange
  • 3 eggs
  • 225g self-raising flour
  • 30ml milk, room temperature
  • 30ml freshly squeezed orange juice
  1. preheat oven to 180C/160C fan
  2. grease and line a 20 cm round cake tin or a loaf tin
  3. put all ingredients in a large bowl and beat with an electric mixer for a minute or so until mixture is smooth
  4. pour into cake tin and bake for about 35min, test with skewer
  5. allow to cool in tin, ice when cool
to make icing

30g butter, softened, a couple of tablespoons of freshly squeezed orange juice, about 200g icing sugar, maybe more
beat with an electric mixture a few minutes until light and fluffy, add more
icing sugar if too runny,or if you like runny leave it as is, spread over cake and enjoy
